For an extra special weekend breakfast, these gluten free waffles are sure to be a hit - drizzled with maple syrup, topped with honey and sliced banana, or fresh berries with a dollop of natural yoghurt - simply divine! You can also add other ingredients such as crushed pecans, cinnamon and dried fruit to the batter.

Ingredients

250g Juvela Gluten-Free White Mix
1 tsp salt
2 tbsp caster sugar
250ml milk
3 medium eggs, lightly beaten
100g melted butter
1 tsp vanilla essence

Method

  1. Before you start you will need an electric waffle maker!
  2. To make the batter, combine the Mix, salt and sugar in a large bowl.
  3. Add the eggs, milk, vanilla essence and melted butter and beat until smooth.
  4. Lightly brush the waffle maker with a little butter; when the waffle maker has reached temperature, pour a layer of batter to cover the bottom plate; close the lid and cook the waffles for 3-4 minutes until golden.
  5. Remove from the plates and serve warm with your choice of toppings. To reheat, pop in the toaster for a couple of minutes.

Really popular with my children (1 coeliac, 1 not). Makes a big batch but I froze the extra waffles
