Veggie Croquettes

These little croquettes are crispy on the outside and soft in the middle - as well as being packed with hidden veg so a great way to get one of your 5 a day!

Ingredients

1 Juvela Part Baked White or Fibre Roll
1 large potato
1 head of broccoli
1 carrot
1tbsp Juvela Gluten Free White Mix
1tbsp olive oil
Salt & pepper
Pinch of garlic granules
100g grated cheddar
4 slices Juvela Gluten Free Fibre Loaf

Method

  1. Peel and boil the potato, then drain and mash roughly with a fork.
  2. Boil the broccoli then drain and place on a chopping board. Blot out some of the excess water with kitchen roll and chop finely.
  3. Peel and grate the carrot, then blot out any excess water with kitchen roll.
  4. Add the broccoli and carrot to the potato then add the White Mix, olive oil, salt, pepper, garlic granules and cheese. Mix well.
  5. Take a small portion of the mixture and shape it into a cube; repeat with the rest of the mixture.
  6. Tear the slices of bread into small pieces. Toast in an oven or an air fryer and then blend into fine breadcrumbs.
  7. Coat each croquette in the breadcrumbs and then place on an oven tray (or air fryer tray).
  8. Bake in a preheated oven at 180°C/160°C Fan/Gas Mark 4 for 25 minutes (or in an air fryer for 20 minutes at 180°C).
