Sweet and Sour Chicken Balls

Fancy trying a delicious gluten free Chinese recipe; these sweet & sour chicken balls are better than any takeaway and can be made in minutes!

Ingredients

For the sauce:
1 tsp chopped garlic
1 tbsp gluten free tamari
100ml pineapple juice
2 tbsp caster sugar
65g tomato ketchup
1 tbsp cornflour mixed with 2 tbsp water
For the chicken:
4 chicken breasts
115g Juvela Gluten Free White Mix
2 tsp baking powder*
Pinch of salt
130ml cold water
1 large egg
2 litres of oil for frying

Method

  1. To make the sauce, mix the sauce ingredients together in a pan. Place on a medium-low heat until the sauce bubbles and thickens, then set aside.
  2. Heat the oil in a large saucepan to 170°C while you make the batter. If you don’t have a thermometer, test it by dropping in a tiny bit of batter when you think it’s ready. If it bubbles and rises to the top it’s ready - if it violently sizzles or smokes it’s too hot.
  3. Chop the chicken breasts into 3cm chunks. Add the Juvela White Mix, baking powder and salt to a bowl and stir together. Pour in the cold water and the beaten egg and whisk until smooth.
  4. Coat the chicken in the batter and leave to sit until the oil is hot enough. Once hot, drop the chicken pieces into the oil one at a time in batches of 5 or 6. Deep fry for 6 minutes, then remove from the oil with a slotted spoon and repeat until all the chicken pieces are cooked.
  5. Serve the chicken balls immediately with the sauce on the side for dipping. Thanks to Sarah @thegfblogger for this lovely recipe.
