Sticky Toffee Pudding

Everyone's favourite comfort dessert - these gluten free sticky toffee puddings are utterly delightful!

Ingredients

100g Juvela Gluten Free White or Fibre Mix
100g caster sugar
100g butter or 70% fat baking margarine
2 medium eggs, beaten
2tbsp boiling water
2tsp coffee
100g chopped dates
For the toffee sauce:
100g soft brown sugar
75g butter
5tbsp double cream

Method

  1. Place the Mix, caster sugar, butter and eggs in a large bowl and beat together thoroughly.
  2. Mix together the boiling water, coffee and chopped dates and stir into the cake mixture.
  3. Divide mixture between the pudding basins and bake in a pre-heated oven for 25-30 minutes until springy to touch. If you prefer, you can make one larger pudding in an oven proof dish (approx 20cm x 30cm).
  4. To make the toffee sauce, place all the ingredients in a pan and heat gently until the butter has melted and the sugar dissolved. Allow to simmer for 1 minute.
  5. To serve, turn out the puddings onto a plate and pour sauce over.
