Sticky Salmon Bites

These tasty salmon bites are a great Friday night fakeaway!

Ingredients

2 salmon fillets, skin removed and cut into chunks
1tsp paprika
½ tsp garlic granules
½ tsp oregano
25g breadcrumbs, made from a Juvela Gluten Free Loaf
1 clove garlic, peeled and crushed
1tbsp sesame oil
1tbsp honey
½ tbsp gluten free soy sauce*
Squeeze of lime

Method

  1. Mix herbs and spices with breadcrumbs and coat each chunk of salmon with the breadcrumbs. Chill for at least 30minutes.
  2. For the sauce, combine garlic, sesame oil, honey, soy sauce and lime.
  3. Lightly dip each chunk of salmon in the sauce and then place into the air fryer. Cook at 190°C for 6-8minutes, turning halfway through.
  4. Serve drizzled with a little extra honey and with rice and fresh vegetables – we pan fried some spring onions, pak choi, sugar snap peas and fresh red chilli in a little sesame oil for a few minutes – delicious!
