Sponge Cake Bars

These delicious light sponge bars are perfect for parties or as a snack with your tea or coffee!

Ingredients

100g butter
130g granulated sugar
50ml milk
2 eggs
130g Juvela Gluten Free White Mix
1/2 tsp baking powder
1 tsp vanilla essence
100g icing sugar
Sprinkles

Method

  1. Add the butter to a mixing bowl and beat with an electric whisk. Next, add the sugar and continue to beat until well combined.
  2. Add the milk and eggs and continue to beat with an electric whisk.
  3. Add the Juvela white mix, baking powder and vanilla extract and gently fold into the mixture using a spatula.
  4. Pour the mixture into a 15cm square lined baking tray.
  5. Bake in a preheated oven at 180°C for 20 minutes, then leave to cool completely before icing.
  6. To make the icing, pour the icing sugar into a bowl and add a tsp of water at a time. Mix well to make a thick icing.
  7. Once the cake has cooled, cut the cake into 8 bar sized portions and pour the icing all over. Finish by adding the sprinkles.
