Spinach & Herb Pancakes

Pack your pancakes with superfood spinach for a tasty meal - why not add mushrooms and a poached egg!

  • 100g Juvela Gluten Free White Mix
  • 2 medium eggs, beaten
  • 250ml milk
  • 2 handful spinach leaves, finely chopped
  • ½ tbsp fresh chives
  • ½ tbsp fresh parsley
  • Method

    1. Place the Mix in a bowl, beat in the eggs and gradually add the milk, beating well to produce a smooth batter.
    2. Stir in the chopped spinach and herbs, and season well.
    3. Heat the oil in a large pan, pour off the excess, and pour in sufficient batter to create a thick circle in the pan.
    4. Cook for a couple of minutes until golden, then flip pancake and cook other side.
    5. Serve warm - perfect with some panfried mushrooms and a poached egg.
