Smoked Salmon Blinis

These blinis are a really simple yet elegant canape - perfect with a glass of fizz!

  • For the blinis:
  • 100g Juvela Gluten Free White Mix
  • 1 medium egg
  • 150ml milk
  • 25g butter, melted
  • For the topping:
  • 100g cream cheese
  • Zest & juice of ½ lemon
  • 100g smoked salmon
  • Fresh dill or chives
  • Method

    1. For the blinis, place the Mix in a bowl and season with freshly ground black pepper.
    2. Make a well in the middle, add the egg yolk and half the milk. Whisk until smooth, and then gradually add the rest of the milk, followed by the butter.
    3. Whisk the egg whites until slightly stiff, then fold into the batter.
    4. Heat the oil in a frying pan, add spoonfuls of batter and cook for 2-3 mins on each side until golden and bubbles appear. Set aside repeat until all the batter is used.
    5. Combine the cream cheese with the lemon juice and zest, and season with freshly ground black pepper. Spread over each blini and top with a slice of smoked salmon and fresh dill or chives.
