Smoked Salmon & Cream Cheese Pancakes

Fancy a little luxury this Pancake Day - try these delightful savoury pancakes with smoked salmon and creme fraiche.

  • 100g Juvela Gluten Free White Mix
  • 2 medium eggs, beaten
  • 250ml milk
  • 2tbsp creme fraiche
  • 100g smoked salmon
  • Freshly ground black pepper
  • Method

    1. Place the Mix in a bowl, beat in the eggs and gradually add the milk, beating well to produce a smooth batter.
    2. Heat the oil in a large pan, pour off the excess, and pour in sufficient batter to evenly coat the base of the pan.
    3. Cook for a couple of minutes until golden, then flip pancake and cook other side.
    4. Place a generous spoonful of crème fraiche onto the base of each pancake and spread over pancakes. Top with slices of smoked salmon; sprinkle with freshly ground black pepper and fold to serve.
