Smashed avocado, chilli and poached egg on toast

Creamy avocado with a hint of chilli and a runny poached egg on a lightly toasted Juvela roll - a perfect weekend brunch!

  • 1 Juvela Gluten Free White Roll
  • 1 ripe avocado
  • Juice of half a lime
  • ½ red chilli, deseeded and finely chopped (optional)
  • 2 medium eggs
  • Freshly ground black pepper
  • Method

    1. Bring a pan of water to the boil; reduce to a simmer, then stir the water to create a whirlpool effect, before adding the eggs.
    2. Cover and simmer for 2minutes, until whites are set but yolks are still runny.
    3. Remove from the pan with a slotted spoon and drain on kitchen roll.
    4. Lightly toast the roll.
    5. Roughly mash the avocado, add lime juice and chilli, and spread over each half of roll.
    6. Top with the cooked eggs and sprinkle with freshly ground black pepper
