Pulled Pork & Coleslaw Roll

This pulled pork hits the spot for a recipe with minimal effort and maximum results - delicious shredded smoky barbecue pork with creamy coleslaw housed in our fresh gluten free rolls. The cooked pork will last for a couple of days in the fridge and is suitable for freezing.

Ingredients

  • 1 Juvela Gluten Free Fresh White Roll
  • Boneless pork shoulder (approx 1.5-2kg)
  • 2 tsp smoked paprika
  • 2tsp cumin
  • 2tsp brown sugar
  • Salt and freshly ground black pepper
  • BBQ sauce to serve
  • Method

    1. Preheat the oven to 150ºC/130ºC/Gas Mark 2 and place the pork in an ovenproof dish or tray.
    2. Combine the spices, sugar and seasoning and rub over the top of the pork.
    3. Pour a little water in the bottom of the dish and pop into the oven for approx 6 hours, checking occasionally and basting with cooking juices (you can add extra liquid if necessary).
    4. Remove from the oven and tranfer onto a large board; drizzle with BBQ sauce and shred the meat using 2 forks.
    5. Slice a Juvela gluten free roll in half; pile some pork onto the base of the roll, top with coleslaw and add the top of the roll.....enjoy!
