Minted Feta & Pea Pasta Salad

With a hint of Spring in the air, this pasta salad makes a light and fresh al fresco lunch to enjoy in the sunshine!

  • 100-150g Juvela Gluten-Free Fibre Penne
  • 1tbsp fresh mint leaves, roughly chopped
  • 50g frozen peas
  • 100g feta cheese, crumbled
  • 50g rocket leaves
  • Zest & juice of ½ lemon
  • Salt and freshly ground black pepper
  • Extra virgin olive oil
  • Method

    1. Cook the Penne as per instructions on pack; add the peas 2minutes before the end of the cooking time.
    2. Drain and rinse thoroughly with cold water.
    3. Transfer to a large bowl and add the crumbled feta, rocket, mint leaves, lemon juice and zest.
    4. Drizzle with olive oil and toss all ingredients together to combine.
