Indian Spiced Falafel Flatbread with Raita and Mango Chutney

This recipe is not only packed with nutrients, it also packs a serious flavour punch - perfect for lunchboxes.

Ingredients

Juvela Gluten Free Indian Flatbreads
1 can chickpeas, drained and rinsed
1 red onion, roughly chopped
A bunch of coriander, roughly chopped and extra for garnish
1 heaped tbsp of curry powder
2 tbsp Juvela gluten free White Mix
½ tsp salt
½ tbsp vegetable oil
For the raita:
Half a cucumber, deseeded
½ tsp salt
250g Greek yoghurt
A large handful mint leaves, finely chopped
Half a lemon or lime
Handful spinach leaves
Mango chutney to serve

Method

  1. Grate the cucumber and add to a sieve over a bowl. Sprinkle over ½ tsp salt and stir well. Leave the cucumber to drain for 15 minutes to remove excess liquid while you prepare the falafels.
  2. Add the chickpeas to the bowl of a food processor with the onion, coriander, curry powder, White Mix and salt. Pulse until combined.
  3. Use wet hands to shape the mixture into 9 patties.
  4. Heat ½ tbsp vegetable oil in a nonstick frying pan over a medium heat. Add the falafels and fry on both sides for 4-5 minutes until crispy and golden. Alternatively, air fry at 200°C for 8-10 minutes until crispy, or place on a lined baking sheet and bake at 200°C/180°C fan/Gas Mark 6 for 10-15 minutes until crispy, turning halfway through.
  5. Meanwhile, finish the raita by adding the grated cucumber to a bowl with the rest of the raita ingredients and mixing well. *TIP: Double up on the raita to use in our recipe for Mint Cucumber Raita, Crispy Chickpea and Spiced Butter Dip with Indian Flatbread.
  6. Heat the flatbreads according to the instructions on pack and assemble flatbreads with a little raita, spinach leaves, falafel patties, mango chutney and extra coriander if using.
