Indian Breakfast Flatbread

Our Indian inspired Flatbreads make the perfect breakfast when paired with a fried masala egg, spiced mushrooms and crispy bacon. This is sure to wake up your taste buds in the morning!

Ingredients

1 Juvela Gluten Free Indian Flatbread
2 rashers back bacon
100g chestnut mushrooms, sliced
¼ tsp salt
¼ tsp cumin seeds
A large handful of spinach
½ tsp vegetable oil
1 large egg
1 tsp masala spice paste (or any curry paste)
30g butter
1 spring onion, finely sliced
Ketchup, mango chutney or chilli oil

Method

  1. Cook the bacon according to your liking (we like to place it under a hot grill for 8-10 minutes, turning halfway through so it’s extra crispy).
  2. Meanwhile, add the sliced mushrooms to a dry frying pan over a high heat. Add the salt and stir every now and then for around 10 minutes. Once the mushrooms have released their liquid they will become crispy and golden.
  3. Add 15g butter to the pan along with the cumin seeds and spinach. Stir for a couple of minutes so the spinach wilts and the cumin seeds smell fragrant. Set aside on a plate.
  4. Using the same pan, add the oil and spice paste. Stir for a few seconds before adding the remaining 15g butter. Once foaming, add the egg and fry to your liking, spooning the spiced butter over the top of the egg every now and then.
  5. Heat the flatbreads according to the packet instructions and assemble - add the mushroom and spinach mixture, top with bacon, fried egg, and a sprinkle of the sliced spring onions. Squeeze over ketchup, spoon over mango chutney or drizzle with chilli oil.
