Veggie sandwich heaven - pan fried halloumi teamed with peppery rocket and sun blushed tomatoes!

Ingredients
| 2 slices Juvela Gluten Free White or Fibre Sliced Loaf | |
| Butter for spreading | |
| Handful of rocket leaves | |
| 50g sunblush tomatoes | |
| 75g halloumi, sliced |
Method
- Cook the halloumi on a griddle pan for a couple of minutes each side until softened.
- Griddle the bread for a minute each side until lightly toasted.
- Pop the halloumi onto one slice and top with rocket leaves, followed by sun blush tomatoes.
- Sprinkle with freshly ground black pepper, sandwich together and serve immediately.
