Halloumi, sun blush tomato & rocket sandwich

Veggie sandwich heaven - pan fried halloumi teamed with peppery rocket and sun blushed tomatoes!

Makes 1


  • 2 slices Juvela Gluten Free White or Fibre Sliced Loaf
  • Butter for spreading
  • Handful of rocket leaves
  • 50g sunblush tomatoes
  • 75g halloumi, sliced
  • Method

    1. Cook the halloumi on a griddle pan for a couple of minutes each side until softened.
    2. Griddle the bread for a minute each side until lightly toasted.
    3. Pop the halloumi onto one slice and top with rocket leaves, followed by sun blush tomatoes.
    4. Sprinkle with freshly ground black pepper, sandwich together and serve immediately.
