Fruited Scones

Scones, a classic served with jam and cream or simply buttered!

This recipe uses 200g of White Mix. A 500g pack of White Mix is 2 units of your monthly prescription unit allowance.

Makes 6
Suitable for home freezing


  • 200g (8oz) Juvela Gluten-Free White or Fibre Mix
  • 1 tsp baking powder*
  • 50g (2oz) butter
  • 25g (1oz) caster sugar
  • 75g (3oz) glace cherries, finely chopped or sultanas
  • 1 medium egg, beaten with sufficient milk to make 125ml liquid
  • Method

    1. Before you start, preheat the oven to 220ºC/425ºF/Gas Mark 7 and lightly grease a baking tray.
    2. Place the Mix and baking powder in a large bowl and rub in the butter until the mixture resembles breadcrumbs.
    3. Stir in the caster sugar and cherries/sultanas and then add sufficient liquid to form a soft but not sticky dough.
    4. Knead lightly on a surface lightly dusted with Mix and pat down until dough is 1inch thick.
    5. Cut out scones using a fluted scone cutter (re-knead any trimmings and repeat).
    6. Place onto baking tray and bake in a preheated oven for 10-15 minutes until golden.
