Crispy Duck & Gluten Free Pancakes

You don't need to miss out on your favourite Chinese food - these gluten free pancakes are perfect with your crispy duck.

Ingredients

150g Juvela Gluten Free White Mix
Pinch of salt
125ml boiling water
½ crispy duck
Half a cucumber
2-3 spring onions
Gluten free hoisin sauce

Method

  1. Place the Mix and salt in a large bowl; add the boiling water and use a spatula to combine to form a dough.
  2. Knead dough until smooth on a surface lightly dusted with Mix (the boiling water should have cooled enough to handle within a few minutes but be careful to check this).
  3. Divide dough into 10 balls and roll each one out as thinly as possible.
  4. Brush a little oil around a frying pan and cook each pancake on a medium heat for 15-20seconds each side (until cooked but not browned).
  5. Cook duck as per instructions on pack, then shred with 2 forks.
  6. Finely slice cucumber and spring onions into strips.
  7. Fill pancakes with duck, cucumber and spring onions, and drizzle with hoisin sauce. Fold and enjoy!
