Christmas Cookies

These fun and festive cookies are the perfect sweet treat to enjoy over the holiday season.

Ingredients

150g Juvela Gluten Free Pure Oats
130g Juvela Gluten Free White Mix
1 tbsp baking powder
1 tbsp cinnamon
1/4 tsp salt
1 egg
2 tbsp vegetable oil
1 tsp vanilla extract
120g golden syrup
Filling:
25g dried cranberries
60g white chocolate chunks
Icing:
1 egg white (at room temperature)
100g sugar
Green and pink food coloring (optional)
Topping:
2 crushed candy canes (optional)

Method

  1. Add all the dry ingredients to a bowl and mix well until fully combined.
  2. In a separate bowl add all the wet ingredients and mix well.
  3. Pour the wet ingredients into the dry and start to mix everything together. Add the fillings and continue to mix until a thick texture forms.
  4. Leave to harden in the fridge for 15 minutes, this will make the step easier.
  5. Roll a small portion of the mixture into a ball and place it on a lined baking tray. Repeat with the remaining batter.
  6. Gently press the balls into cookie shapes.
  7. Bake in a preheated oven at 180°C for 12 minutes. Leave the cookies to cool completely on a cookie rack before icing.
  8. To make the icing, add the egg white to a bowl and then sieve in the sugar. Mix until the mixture thickens but is runny.
  9. Separate the mixture into two separate bowls and add the food colorings to each. Mix well.
  10. Drizzle your cookies with the icing and sprinkle crushed cand canes over them.
