Chocolate chip bread & butter pudding

One of our favourite classics - with a sprinkling of chocolate chips - yum!

Ingredients

4 medum eggs, lightly beaten
1tsp vanilla extract
1tsp cinnamon
120g brown sugar
300ml milk
200ml double cream
10 slices from a Juvela Gluten Free White Sliced Loaf
50g chocolate chips
40g raisins
60g unsalted butter
1tbsp caster sugar

Method

  1. In a large mixing bowl, mix together the eggs, vanilla extract, cinnamon and brown sugar. Add the milk and double cream and mix until smooth.
  2. Tear the bread into quarters and add to the mixture, make sure the bread is fully covered in the liquid then leave to sit for 5 minutes.
  3. Transfer half the bread mixture into an buttered ovenproof dish, top with the raisins and half the chocolate chips. Then layer the rest of the mixture over the top.
  4. Melt the butter and pour over the mixture then sprinkle with the remaining chocolate chips. (Optional - add 1 tbsp of caster sugar over the top of the mixture)
  5. Bake in an air fryer at 180°C for 30-35minutes (or in a preheated oven at 180°Cfor 40 minutes). Serve hot with ice cream or custard.
