Chicken Fajitas

Make your own wraps easily! This recipe is a tasty gluten free version of the well-loved traditional Mexican dish. We use chicken here, but it will work just as well with the same quantity of beef, pork or prawns. (this quantity makes 8 wraps - use 2 per serving of fajitas and freeze the rest; the filling ingredients are for 2 servings)

Ingredients

  • Tortillas: 300g Juvela Gluten-Free White or Fibre Mix
  • ½ tsp salt
  • Approx. 300ml water
  • Filling: 1tbsp olive oil
  • 1 red onion, sliced into strips
  • 1 garlic clove, peeled and crushed
  • 2 chicken breasts, sliced into strips
  • 1 red pepper, sliced into strips
  • 1 green pepper, sliced into strips
  • 2tsp Cajun seasoning or Fajita Mix*
  • Salt and freshly ground black pepper
  • Method

    1. To make the tortillas, place the Mix in a bowl and add sufficient water to form a soft but not sticky dough.
    2. Knead the dough until smooth on a surface lightly dusted with Mix.
    3. Divide the dough into eight equal pieces, shape each piece into a round, and roll out thinly.
    4. Dust off any excess Mix and cook in a heavy-based frying pan for about one minute each side.
    5. Layer cooked tortillas in a polythene bag to retain softness.
    6. To make the filling, heat the oil in a large pan and fry the onion and garlic for a couple of minutes.
    7. Add the chicken and Cajun seasoning and simmer gently for 10-15minutes until chicken is cooked.
    8. Add the peppers and season to taste.
    9. Spoon the filling down the centre of each tortilla and roll up.
    10. Serve with fresh salsa, guacamole and soured cream.
