Chicken Chow Mein

Ingredients

1tbsp sesame oil
200g chicken breast, cut into strips
2 cloves garlic, crushed
½ carrot, cut into thin strips
Handful of sugar snap peas, roughly sliced
Handful of beansprouts
2 spring onions, finely sliced
For the sauce:
2tsp Juvela Gluten Free White Mix
1½ tbsp gluten free soy sauce
1½ tbsp gluten free oyster sauce
1½ tbsp dry sherry
1tsp sugar
For the noodles:
150g Juvela Gluten Free White Mix
Pinch of salt
½ tsp xanthan gum
1 medium egg
2 medium egg yolks

Method

  1. To make the noodles, place the Mix, salt and xanthan gum in a large bowl and make a well in the centre. Crack the eggs into the well and beat well with a fork, then using you hand, combine to form a dough.
  2. Knead until smooth on a surface lightly dusted with Mix. Split the dough in half and wrap one half in cling film to stop it drying out.
  3. Roll the other half out as thinly as possible with a rolling pin and ensure your surface is well dusted with Juvela Mix.
  4. Cut dough into strips as thinly as possible and spread out to dry for an hour.
  5. Cook for a couple of minutes in boiling water and add to the pan to lightly coat in the sauce.
  6. For the sauce, combine the Mix and soy sauce, then add the remaining ingredients. Pour 1tbsp of sauce over the chicken and stir to coat; set aside to marinade for a few minutes.
  7. Heat the oil in a large frying pan and fry the garlic over a gentle heat. Add the marinated chicken, increase the heat and pan fry for a few minutes until turning golden.
  8. Add the carrot, sugar snap peas, beansprouts and spring onions and stir fry for another minute; then add the noodles and remaining sauce and toss to combine. Serve immediately.
