What better way to use up those potato and veggie leftovers from the festivities than with a tasty bubble & squeak. We've added a crunchy topping with some gluten free croutons infused with garlic!

Bubble & Squeak with Garlic Croutons

What better way to use up those potato and veggie leftovers from the festivities than with a tasty bubble & squeak. We've added a crunchy topping with some gluten free croutons infused with garlic!

Ingredients

1 onion, peeled and finely chopped
200g mashed potato
150g Brussels sprouts, carrots and broccoli (or any left over vegetables), roughly chopped
1 Juvela Gluten Free White or Fibre Roll (fresh or longlife roll), cut into chunks
3-4 garlic cloves, peeled and halved
2tbsp olive oil

Method

  1. Heat the oil in a frying pan and fry the onion for a few minutes until softened.
  2. Add the potato and chopped vegetables to the pan, stir to combine and heat through.
  3. Meanwhile, heat the oil in a large heavy based frying pan. Add the chunks of bread and the garlic cloves and cook for approx 10 minutes, turning frequently, until the croutons are golden brown and crisp. (you can also do this in the oven on a baking trayf if you prefer).
  4. Spoon the potato mixture into bowls and top with plenty of crunchy croutons.
  5. Alternatively, you can then shape the mixture into patties and pan fry in a little oil for a few minutes on each side until lightly crispy, and then top with the croutons – and maybe even a poached egg!
