Brie & Courgette Spaghetti

A divine pasta dish with creamy brie, sweet cherry tomatoes and crunchy courgettes. Try it with blue cheese and add strips of crispy bacon.

  • 150g Juvela Gluten-Free Spaghetti
  • 250g courgettes
  • 2tbsp olive oil
  • 1 garlic clove, peeled and crushed
  • Grated zest and juice of a lemon
  • 100g cherry tomatoes, roughly chopped
  • 75g French Brie
  • Freshly ground black pepper
  • Method

    1. Cook the Spaghetti as per instructions on pack.
    2. Drain and rinse thoroughly with boiling water.
    3. Cut the courgettes in half lengthways and then into slices.
    4. Heat the oil in a large pan and fry the courgettes and garlic for a few minutes until softened.
    5. Add the lemon zest, tomatoes and 1tbsp hot water.
    6. Cook for a further 2-3 minutes until the tomatoes start to soften.
    7. Remove from the heat and stir in the Brie so it just starts to melt.
    8. Season well with freshly ground black pepper and lemon juice.
    9. Toss in the spaghetti and coat well with the cheese mixture.
    10. Serve with a fresh green salad.
