Bread & Butter Pudding

A tradtional British pud that is so comforting and absolutely delicious.

  • 1 Juvela Gluten Free White Sliced Loaf, crusts removed
  • 50g butter, softened
  • 50g sultanas or apricots
  • Grated rind of a lemon
  • 2 medium eggs, lightly beaten
  • 375ml milk
  • 40g caster sugar
  • Pinch of grated nutmeg
  • 25g walnut pieces
  • Method

    1. Thickly spread the slices of bread with butter, cut in half to make triangles and place half the slices into the prepared dish.
    2. Sprinkle over half the sultanas and half the lemon rind and top with the remaining bread, butter side up.
    3. Beat together the eggs, milk, sugar and nutmeg and pour over the bread.
    4. Sprinkle with the rest of the lemon rind and sultanas/apricots and walnuts. Allow the pudding to stand for 15minutes, then bake in a preheated oven (180ºC/160ºC/350ºF/Gas Mark 4) for 1hour until golden.
