Blueberry Bake

Our delicious gluten free blueberry bake is a great sweet treat for kids - and it's so easy to make that little hands can help!

Ingredients

450g fresh blueberries
40g granulated sugar
Zest and juice of a lemon
For the batter:
260g Juvela Gluten Free White Mix
160g granulated sugar
½tsp baking powder
½ salt
150ml milk
60g butter
½tsp vanilla extract

Method

  1. In a bowl, add the fresh blueberries, 40g sugar, lemon juice and zest. Mix well and set aside.
  2. In a separate bowl, add the Juvela White Mix, 160g sugar, baking powder, salt, milk, melted butter, and vanilla extract and stir well until a smooth batter forms.
  3. Add the blueberries to an ovenproof baking dish (approx 15cm square) then pour the batter over the top.
  4. Bake in a preheated oven (180°C/160°C Fan/Gas Mark 4) for 25 minutes.
  5. Serve warm with ice cream and extra blueberries.
