Blondies

These gorgeous gluten free blondies are a lighter and softer alternative to a chocolate brownie, and they can be whipped up in a matter of minutes!

Ingredients

200g butter
250g coconut sugar
3 medium eggs
1tbsp vanilla extract
250g Juvela Gluten Free White Mix
½tsp baking powder*
1tsp salt
120g white chocolate chips

Method

  1. Melt the butter and add to a large mixing bowl, then add the coconut sugar and mix well.
  2. Stir in the eggs and vanilla extract, then add the White Mix, baking powder and salt. Mix well until a smooth batter is formed.
  3. Stir in most of the chocolate chips (save 30g to drizzle over at the end) and pour the mixture into a lined baking tray approx 15cm square (or an air fryer tray)
  4. Bake in a preheated oven (180°C/160°C Fan/Gas Mark 4) for 30 minutes (or in an air fryer at 160°C for 25 minutes).
  5. Allow to the blondies to cool completely in the baking tray before cutting
  6. Once the blondies are cool, cut into 9 squares. Melt the remaining chocolate chips and drizzle over the top.
