Beef Casserole & Dumplings

A hearty and warming stew with fluffy homemade gluten free dumplings - sure to keep you warm and cosy on those dark evenings!

Ingredients

1tbsp vegetable oil
1 medium onion, roughly chopped
2 bay leaves
2tbsp fresh thyme leaves
400g braising steak, cut into chunks
75ml red wine
1tbsp Juvela Gluten Free White Mix
1tsp mustard powder*
250ml passata
400ml vegetable stock*
200g carrots, roughly chopped
100g swede, roughly chopped
200g butternut squash, cut into chunks
100g chestnut mushrooms, roughly chopped
For the dumplings:
200g Juvela Gluten Free White or Fibre Mix
¼ tsp salt
100g vegetable suet* or lard/white Flora (put in freezer until very cold but not frozen)
1tbsp fresh parsley, finely chopped (optional)
Cold water to mix

Method

  1. Heat the oil in a large saucepan and fry the onions for approx. 5minutes over a low heat until soft.
  2. Increase the heat and add the braising steak; fry for a few minutes to brown the meat, then add the thyme, bay leaves, and wine.
  3. Allow to bubble for a few minutes, then reduce the heat and add the White Mix and mustard and stir well to make a thick sauce.
  4. Add the passata and stock and bring to the boil, then add the vegetables, cover with a lid and simmer for approx. 50minutes, stirring occasionally. Remove the lid and cook for a further 20-30minutes until the sauce has thickened slightly and the meat is lovely and tender.
  5. For the dumplings, place the Mix, salt, suet and parsley in a large bowl. (if you are using lard/flora, coarsely grate into a bowl and sprinkle with Mix to separate the pieces, then add to the Mix with other ingredients).
  6. Add sufficient water to make a soft but not sticky dough. Shape into 8 dumplings and place in an ovenproof dish to cook separately or on top of your casserole. Bake in a preheated oven for 20 minutes until golden brown.
  7. *NB gluten free suet is available in some supermarkets and can also be purchased online

Wonderful beef casserole. My dumplings need improving but loved the taste of the casserole..
