Caramelised Fig & Stilton Crostini

With a creamy blue cheese base and sweet caramelised fig topping, these gluten free crostini are a simple yet delightful canape for your festive drinks!

Ingredients

1 Juvela Gluten Free White or Fibre Part Baked Roll
2tbsp olive oil
50g creamy blue cheese
2tbsp soured cream
1-2 fresh figs
1 tbsp caster sugar
Handful of rocket leaves

Method

  1. Slice a part baked roll into 4-5 slices (approx.1cm thick).
  2. Lightly brush both sides of each slice with olive oil; place on a baking tray and bake in a preheated oven (180°C/160°CFan/Gas Mark 4) for 10minutes until golden.
  3. Crumble the blue cheese and mix with the sour cream, then spread over each crostini.
  4. Cut the figs into thick slices and sprinkle with sugar, then pan fry for a minute each side until caramelised.
  5. Place figs on top of cheese, top with rocket leaves and season with freshly ground black pepper. Serve hot or cold.
