Banana Teabread

This delicious cake is really easy to make and is the perfect teatime treat!

This recipe uses 175g of Fibre Mix. A 500g pack of White Mix is 2 units of your monthly prescription unit allowance.

  • 175g (7oz) Juvela Gluten-Free Fibre Mix
  • ¼ tsp bicarbonate of soda
  • 75g (3oz) butter
  • 150g (6oz) caster sugar
  • 2 medium eggs, lightly beaten
  • 4-5 medium bananas, mashed
  • 100g (4oz) chopped mixed nuts (optional)
  • Method

    1. Before you start, preheat the oven to 180ºC/350ºF/Gas Mark 4 and grease and line a 2lb loaf tin (or deep swiss roll tin if making as a traybake).
    2. Place all the ingredients in a bowl and beat together until thoroughly combined.
    3. Place the mixture in the prepared tin and bake for 45 mins-50mins (approx 30mins for traybake), until well risen and firm to touch.
    4. Allow to cool on a wire rack.
