Banana & Peanut Butter Muffins

These muffins are an ideal treat for kiddies and as they’re so simple to make, why not let them have a go themselves?

This recipe uses 200g of White Mix. A 500g pack of White Mix is 2 units of your monthly prescription unit allowance

  • 200g Juvela Gluten Free White Mix
  • 1tsp baking powder*
  • 100g butter or 70% fat baking margarine
  • 100g caster sugar
  • 4 medium eggs, lightly beaten
  • 6tbsp peanut butter
  • 1 large banana, mashed
  • Method

    1. Place all the ingredients in a large bowl and beat together until light and fluffy.
    2. Divide between muffin cases and bake in a preheated oven (190ºC/170ºC Fan/375ºF/Gas Mark 5 for 15-20 minutes (10-15 for mini muffins) until golden and firm to touch.
