Banana & Blueberry Muffins

These fabulous muffins make a great healthier snack - the sweetness from the banana and berries means you can use less sugar, and adding chia seeds gives a boost to fibre, vitamins and minerals.

This recipe uses 350g of White Mix. A 500g pack of White Mix is 2 units of your monthly prescription unit allowance.

  • 3 medium ripe bananas, roughly mashed
  • 125g soft brown sugar
  • 2 medium eggs, lightly beaten
  • 75g butter, melted
  • 350g Juvela Gluten Free White Mix
  • 1½tsp baking powder
  • Pinch of salt
  • 25g chia seeds
  • 150g blueberries
  • Method

    1. In a large bowl, whisk the mashed banana with sugar, eggs and butter.
    2. Combine Mix, baking powder, salt and chia seeds and stir into the banana mixture – mix well with a wooden spoon or spatula, then stir in half the blueberries.
    3. Divide between muffin cases, top with remaining blueberries and press down gently. Bake in a preheated oven (190ºC/170ºC Fan/375ºF/Gas Mark 5) for 15-20 minutes (10-15 for mini muffins) until golden and firm to touch.
