Banana, Honey & Nut Pancakes

What a treat - these simple Scotch pancakes are stacked and rizzled with honey, then toppe with crunchy nuts and slices of banana!

  • 75g Juvela Gluten Free White Mix
  • 25g caster sugar
  • 25g butter, melted
  • 1 medium egg, lightly beaten
  • 100ml milk
  • Vegetable oil
  • 3tbsp runny honey
  • 25g mixed chopped nuts
  • 1 sliced banana
  • Method

    1. Place the Mix and sugar in a bowl. Stir in the melted butter and egg.
    2. Gradually add the milk, beating well after each addition to form a smooth batter.
    3. Use a little oil to grease a griddle or frying pan, and drop tablespoons of batter into the pan. Cook for 2 minutes until small bubbles appear on the surface and the undersides are golden.
    4. Carefully turn over and cook for a further 2 minutes. Repeat with the remaining mixture.
    5. Stack on a plate and drizzle with honey, then top with chopped nuts and banana slices.
