Perfect Spring Supper!

I must share with you this fabulous recipe for a Chicken & Pea Traybake by Nigella Lawson, that I found in the Waitrose online magazine (all gluten free of course!). I spotted the recipe, along with the one for Roast Potatoes & Feta some time ago in a Waitrose magazine, and had been desperate to try it out ever since!

The perfect opportunity arose last weekend when we had our friends over for supper. I put it together in no time and it was really tasty! Once cooked the peas may not be as bright as when you boil them, but their flavour was magnificent. I used white wine instead of vermouth, as I knew the surplus wine would get used!

With the veg already being in the bake no other veg was needed. And the potatoes, roasted with garlic, oregano and finished with crumbled feta worked perfectly alongside the chicken.

I really do think it would make a perfect Spring meal. It can be assembled in advance and popped in the oven when you are ready. You can also double up the portions accordingly if you have a large gathering and everyone can tuck in and enjoy!

*Although herbs and spices should be naturally gluten free, please just double check container to ensure no ‘may contain warnings’. As always 'if in doubt leave it out'.

*There is also a chocolate cake recipe that is on the same recipe slider as the chicken and potato one. I have checked it and providing you check your *chocolate, *cocoa and *ground almonds to ensure gluten free the cake would be fine for you. The Amaretti cream however uses amaretto biscuits which are not normally gluten free. Orgran do produce gluten free amaretto biscuits, if that helps. Or you could just serve nice thick cream flavoured with the amaretto!
