Glorious gluten free sponge cake!

I recently came across a fabulous gluten free sponge cake recipe on another gluten free blog ‘Every Nook & Cranny’ and I have been itching to give it a whirl. It’s only a slight twist to the basic sponge cake recipe on the back of Juvela Gluten Free White Mix box, but after trying it out at the weekend the results were AMAZING and I simply have to share it with you!

Ingredients

175g (7oz) Gluten Free White Mix

25g (1oz) Birds Custard Powder

1 Teaspoon Baking powder*

200g (8oz) Butter or margarine (min 70% fat content)**

200g (8oz) Caster sugar

4 Large eggs

** I used Lurpak® Spreadable as I think it gives the best results!

 

Method

Preheat oven to 160c Fan/ 180c Electric/ 350F/Gas Mark 4

What I love about the basic sponge cake recipe is the all-in-one mixing method works perfectly, the ‘new’ ingredient was the addition of some Bird’s custard powder, which gets popped in at the same time (Birds is safe for coeliacs, no “gluten containing nasties” in there, if using a different custard powder always check that its gluten free).

Weigh all the ingredients into a large bowl and mix with an electric mixer or hand whisk until the mixture is pale and creamy.

Transfer the mixture into two grease and lined sandwich tins (readymade liners are great!!).

Pop in the oven for about 20 minutes, you will know its ready when you press the top of the sponge and it bounces back.

Remove from the oven and once cooled down a little, pop onto a cooling rack.

I filled mine with strawberry jam (I used Bonne Maman® as its the closest I have come to homemade jam – yum!) The sponge was just so light I also think it would have been great as a gateaux base. I’m sure you will have loads of ideas what you would like to fill yours with!

Although I’m not advocating you do this every day, I love nothing more than having a piece of freshly baked cake with a cuppa in the morning, so of course this is what I did at the weekend! The rest was brought into the office to share with the girls and to get their feedback on the recipe… I think its safe to say they liked it!

When you have a minute I’d love you to give this fabulous sponge recipe a go and if you don’t want to gobble it all up in one go you can always portion it up, wrap and freeze!!

*Any ingredients marked with an asterisk, just check to make sure its gluten free!!

    Going to try this. Can see it’s going to add an extra oomph.
    Wish I could bake cakes with less sugar or sugar substitute as now type 2 as well. Too much glorious cake bakes

      My husband is the coeliac in the family and a cake enthusiast!
      I regularly make him the Juvela lemon drizzle cake with greatly reduced sugar content. I use 65g caster sugar in the cake mixture instead of 150g and 30g in the lemon drizzle instead of 100g. Have had no complaints from him, he loves it and so do I!
      I have also greatly reduced the sugar quantity in the Juvela ginger cake recipe with equally great results.

      I too need low sugar, gluten free,dairy free, egg free. It’s hard work. But gluten free and low sugar is hard to find baking recipes for

    My husband is the cake maker in our family and can’t wait for him to try this recipe out, sadly I am in hospital so will have to wait until the weekend when he may have time to bake me a lovely cake, his family speciality is a gluten free Black Forest gateaux it always goes down well at Christmas or birthday party time, so I must get the camera out next time the mixing bowl comes out.
