Tomato, Herb & Olive Crusted Trout

Serves 2


ingredients:

  • 100g (4oz) breadcrumbs (made from a JUVELA Gluten-Free Loaf)
  • 2tbsp fresh parsley, finely chopped
  • 2 plum tomatoes, finely chopped
  • 50g (2oz) black pitted olives, finely chopped
  • 2 trout fillets
  • Olive oil

Oven temperature: 200°C/400°F/Gas Mark 6

Method:

Combine the breadcrumbs with the herbs, tomatoes and olives and season well. Place the trout fillets on a baking tray and spoon the crust mixture on top. Drizzle with a little olive oil and bake in a pre-heated oven for about 15 minutes.
