Steamed Syrup Sponge

Serves 6


ingredients:

  • 4tbsp syrup
  • 100g (4oz) JUVELA Gluten-Free Mix
  • 1tsp baking powder*
  • 100g (4oz) light muscovado sugar
  • 100g (4oz) butter, softened
  • 2 medium eggs, beaten
  • 2tbsp water

1 litre (2 pint) pudding basin, greased and base lined

Method:

Spoon the syrup into the base of the pudding basin. Beat together all other ingredients until light and fluffy. Spoon the mixture over the syrup and smooth the top.

Cover loosely with cling film and microwave on full power for 6 minutes. Leave to stand for 5 minutes before turning out onto a plate. Alternatively, bake in a pre-heated oven (190°C/375°F/Gas Mark 5) for 10-15 minutes until golden.
