Peanut Butter & Chocolate Chip Muffins

Makes 12 large or 30 mini muffins

A quick and simple recipe using the all-in-one method. The mouthwatering combination of peanut butter and chocolate chips makes these muffins extremely moreish, but if you can resist them long enough, they freeze very well!

ingredients:

  • 200g (8oz) JUVELA Gluten-Free Mix
  • 1tsp baking powder*
  • 100g (4oz) soft margarine
  • 100g (4oz) caster sugar
  • 4 medium eggs, beaten
  • 6tbsp peanut butter*
  • 100g (4oz) chocolate chips*

Oven temperature: 190°C/375°F/Gas Mark 5

Method:

Place all the ingredients in a large bowl and beat together until light and fluffy. Divide between muffin cases and bake in a pre-heated oven for about 20 minutes until golden and firm to touch.
