Parkin

Serves 8 - 10

Keep yourself warm this bonfire night with a hot cuppa and a slice of deliciously moist and sticky homemade parkin.

ingredients:

  • 200g/8oz JUVELA Gluten-Free Mix
  • 100g/4oz caster sugar
  • 1 tsp ground ginger
  • 1 tsp bicarbonate of soda
  • 1 medium egg
  • 200ml/8fl oz milk
  • 50g/2oz butter
  • 100g/4oz golden syrup

2lb loaf tin, greased and base lined

Oven temperature: 150°C/300°F/Gas Mark 2

Method:

In a large bowl, combine the Mix, sugar, ginger and bicarbonate of soda. In a small pan, gently heat the butter and syrup until melted. Gradually add the butter and syrup mixture to the dry ingredients.

Beat together the egg and milk and add to the mixture; mix together until smooth and transfer into the prepared tin. Bake in a preheated oven for approx. 45-50mins until golden brown.
