Mozzarella & Pesto Bruschetta

Serves 4-8

A variation of the traditional bruschetta recipe - equally as delicious; serve as a starter or light snack.

ingredients:

  • 4 JUVELA Gluten-Free Part Baked Rolls
  • 1 tbsp olive oil
  • 4 tbsp green pesto*
  • 150g (6oz) mozzarella
  • 4 tomatoes, chopped
  • 2 garlic cloves, peeled and crushed
  • 2 tbsp fresh basil, finely chopped
  • Salt and freshly ground black pepper

Method:

Bake the part baked rolls in a pre-heated oven for about 10 minutes until golden. Remove from the oven and slice each roll in half (lengthways). Spread the pesto over the base, top with mozzarella, tomato and basil. Season well and return to the oven for a further 5 minutes.
