Mixed Berry Clafoutis with Berry Sauce

Serves 4

An impressive pudding idea which is so easy to make, you wouldn't believe! This can be made as one large clafoutis or divided into small ramekins for lots of individual desserts, which are ideal for freezing.

ingredients:

  • 500g bag frozen summer fruits, thawed
  • 125g (5oz) JUVELA Gluten-Free Mix
  • Pinch of salt
  • 60g (2 1/2oz) golden caster sugar
  • 3 medium eggs, lightly beaten
  • 400ml (16fl oz) skimmed milk

Oven temperature: 180°C/350°F/Gas Mark 4. 20cm (8inch) baking dish, lightly greased.

Method:

Sieve the fruit over a bowl and retain the juice. Set aside for a few minutes to drain completely.

To make the batter, place the Mix, salt and sugar in a large bowl. Make a well in the centre and add the eggs. Gradually add the milk, beating well until a smooth thin batter is formed.

Transfer the drained fruit into the prepared dish and spread around the base of the dish. Pour the batter over the top and bake in a pre-heated oven for about 50 minutes until the batter is golden brown.

For the berry sauce, put the drained juice in a saucepan with 1tbsp sugar and place over a low heat to dissolve the sugar, then bring to the boil and bubble until reduced and syrupy. Drizzle over the clafoutis to serve.
