Minted Feta & Rocket Pasta Salad

A fresh and light pasta salad - perfect for packed lunches

ingredients:

  • 100-150g (4-6oz) JUVELA Gluten-Free Fibre Penne (dry weight)
  • 1tbsp fresh mint leaves, roughly chopped
  • 50g (2oz) frozen peas
  • 100g (4oz) feta cheese, crumbled
  • 50g (2oz) rocket leaves
  • Zest & juice of ½ lemon
  • Salt and freshly ground black pepper
  • Extra virgin olive oil

Method:

Cook the Penne as per instructions on pack; add the peas 2minutes before the end of the cooking time.

Drain and rinse thoroughly with cold water.Transfer to a large bowl and add the crumbled feta, rocket, mint leaves, lemon juice and zest. Drizzle with olive oil and toss all ingredients together to combine.
