Baked Mackerel Bruschetta

Serves 1

A twist on a simple bruschetta - the addition of tinned mackerel (or sardines) means you're increasing your intake of omega-3 fatty acids, which research shows is beneficial to your health. This recipe is a perfect light lunch idea and can easily be scaled up.

ingredients:

  • 1 JUVELA Gluten-Free Part-Baked Fibre Roll
  • 50g (2oz) tinned sardines in tomato sauce*
  • 3-4 cherry tomatoes, finely chopped
  • ¼ small red onion, finely chopped
  • 1 garlic clove, peeled and crushed
  • 1tbsp fresh basil, finely chopped

Oven temperature: 200°C/400°F/Gas Mark 6

Method:

Slice the Part Baked Roll in half. Brush each half with the olive oil. Combine together the sardines, tomatoes, red onion, garlic and basil and season well. Divide mixture between each half of the roll. Bake in a pre-heated oven for 10-12 minutes.
