Luscious Lemon Pud

Serves 6

Steamed sponge puddings - classic winter warmers for those dark cold nights. This recipe uses tangy lemon curd to make a deliciously light but comforting pud in minutes. Great with hot custard*.

ingredients:

  • 4tbsp lemon curd*
  • 100g (4oz) JUVELA Gluten-Free Mix
  • 1tsp baking powder*
  • 100g (4oz) light muscovado sugar
  • 100g (4oz) butter, softened
  • 2 medium eggs, beaten
  • 2tbsp water
  • Grated rind of a lemon

1 litre (2 pint) pudding basin, greased and base lined

Method:

Spoon the lemon curd into the base of the pudding basin. Beat together all other ingredients until light and fluffy. Spoon the mixture over the lemon curd and smooth the top.

Cover loosely with cling film and microwave on full power for 6 minutes. Leave to stand for 5 minutes, then remove the cling film and turn out onto a plate. Alternatively, to bake in a pre-heated oven, do not cover with cling film. Place in a pre-heated oven (190°C/375°F/Gas Mark 5) for 20-25 minutes until golden.
