Ginger Spice Cake

Before you start, pre-heat the oven to 180°C/350°F/Gas Mark 4 and grease and base line a 2lb loaf tin.

ingredients:

  • 150g (6oz) butter or margarine
  • 150g (6oz) soft brown sugar
  • 150g (6oz) JUVELA Gluten-Free Mix
  • 1tsp ground ginger
  • ¼tsp cinnamon
  • ¼tsp nutmeg
  • 2 medium eggs, lightly beaten

ingredients decoration:

  • 3tbsp glace icing
  • 50g (2oz) glace ginger

Method:

Melt the fat and sugar together in a pan. Remove from the heat and stir in the Mix, ginger, cinnamon, nutmeg and eggs. Beat well until smooth and pour into prepared tin.

Bake in a pre-heated oven for 40-45minutes. Allow to cool, drizzle with glace icing and decorate with glace ginger.
