Fruit & Nut Cookies

Makes 10-12

Crunchy cookies with chunky chocolate chips, plump raisins and crunchy nuts.

Before you start, pre-heat the oven to 190°C/375°F/Gas Mark 5

ingredients:

  • 100g (4oz) butter
  • 100g (4oz) demerara sugar
  • 75g (3oz) milk chocolate chips*
  • 75g (3oz) raisins
  • 50g (2oz) mixed chopped nuts
  • 1 medium egg, beaten
  • 200g (8oz) JUVELA Gluten-Free Fibre Mix

Method:

Cream together the butter and sugar. Add the chocolate chips, nuts and raisins. Beat in the egg and Gluten-Free Fibre Mix and bring together to form a dough. Knead lightly until smooth on a surface lightly dusted with Fibre Mix. Cut into rounds using a pastry/cookie cutter and place well apart on a greased baking tray.

Bake in a pre-heated oven for 15-20 minutes until golden brown. Allow to cool slightly before moving.
