Crunchy Cookies

This recipe is a quick and easy way to create your own delicious gluten-free cookies.

Before you start, pre-heat the oven to 190°C/375°F/Gas Mark 5 and lightly grease a baking tray.

ingredients:

  • 100g (4oz) butter
  • 100g (4oz) soft brown sugar
  • 1tsp vanilla essence
  • 1 medium egg, beaten
  • 200g (8oz) JUVELA Gluten-Free Fibre Mix

Method:

Cream together the butter, sugar and vanilla essence. Beat in the egg with the Fibre Mix and bring together to form a dough. Knead lightly until smooth on a surface lightly dusted with Fibre Mix. Cut out into desired shape using a pastry/cookie cutter and place well apart on baking tray. Bake in a pre-heated oven for 15-20 minutes until golden brown. Allow to cool slightly before moving.
