Coffee & Walnut Loaf

A tasty teatime treat, perfect thickly sliced and spread with butter!

ingredients:

  • 175g (7oz) JUVELA Gluten-Free Fibre Mix
  • ¼tsp bicarbonate of soda
  • 75g (3oz) butter or margarine
  • 100g (4oz) soft brown sugar
  • 2 medium eggs, lightly beaten
  • 50ml (2fl oz) milk
  • 2tsp coffee granules, dissolved in 1tbsp boiling water
  • 50g (2oz) walnuts, finely chopped

Oven temperature: 150°C/350°F/Gas Mark 4.

You will need: 2lb loaf tin, greased and base lined.

Method:

Place all the ingredients in a large bowl and beat together until thoroughly combined. Transfer the mixture into the prepared tin and bake in a pre-heated oven for 35-40 minutes until well risen and firm to touch. Remove from the tin and allow to cool on a wire rack.
