Chocolate Orange Bread Pudding

Serves 4-6

A delicious alternative to the classic bread and butter pudding.

Before you start, pre-heat the oven to 180°C/350°F/Gas Mark 4.

ingredients:

  • 4tbsp orange marmalade
  • 4tbsp chocolate spread*
  • 1 JUVELA Gluten-Free Sliced Loaf, crusts removed
  • 50g (2oz) chocolate chips*
  • 2tbsp cocoa*
  • 50g (2oz) caster sugar
  • 375ml (¾ pt) milk
  • Grated rind of an orange
  • 2 medium eggs

1 litre (2 pint) ovenproof dish or 6 ramekin dishes

Method:

Mix together the marmalade and chocolate spread and use to spread on the slices of bread. Cut into triangles and place half in the dish, chocolate side up. Sprinkle over half of the chocolate chips and top with remaining triangles.

Dissolve the cocoa and sugar in a little hot water and blend together with the milk and orange rind. Beat in the eggs and pour mixture over the bread. Sprinkle with remaining chocolate chips and bake in a pre-heated oven for 1 hour until crisp. Delicious served hot or cold.

For individual puddings, cut bread into circles using a pastry cutter and use to fill each ramekin as method above.
