Banoffee Muffins

Makes 12 large or 30 mini muffins

Simple to make and quick to bake - a mouthwatering combination of banana and toffee sauce is used to make these moreish muffins!

ingredients:

  • 200g (8oz) JUVELA Gluten-Free Mix
  • 1tsp baking powder*
  • 100g (4oz) soft margarine
  • 100g (4oz) caster sugar
  • 4 medium eggs, beaten
  • 1 medium banana, mashed
  • 5tbsp toffee sauce*

Oven temperature: 190°C/375°F/Gas Mark 5

Method:

Place all the ingredients in a large bowl and beat together until light and fluffy. Divide between muffin cases and bake in a pre-heated oven for about 15-20 minutes (10-15 minutes for mini muffins) until golden and firm to touch.
